Fresh chickpea lunch salad with cucumber, herbs, dates and goat cheese, adapted into a Dutch-friendly recipe.
Serves: 4 people

Ingredients
- Chickpeas – 400 g
- Cucumber – 1
- Cherry tomatoes – 250 g
- Dates – 80 g
- Goat cheese – 120 g
- Parsley – 15 g
- Mint – 10 g
- Olive oil – 4 tbsp
- Lemon juice – 2 tbsp
- Ground cumin – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Drain the chickpeas and rinse well. Dice the cucumber and halve the tomatoes.
STEP 2
Slice the dates and chop the herbs.
STEP 3
Whisk olive oil, lemon juice, cumin, salt and pepper into a simple dressing.
STEP 4
Combine all salad ingredients, crumble over the goat cheese and drizzle with dressing.
