Thick homemade mayonnaise with mustard and lemon juice.
Serves: 6 people
Preparation time: 25 min
Ingredients
- egg yolk – 1
- Dijon mustard – 1 tsp
- lemon juice – 1 tbsp
- neutral oil – 1 cup
- salt – to taste
- white pepper – to taste
Method
1. Put the egg yolk, mustard and lemon juice in a bowl.
2. Whisk well, then add the oil drop by drop at first.
3. Continue whisking while adding the rest of the oil in a thin stream until thick.
4. Season with salt and white pepper.
5. If needed, loosen with a few drops of water.
6. Chill before serving.
