A classic chicken soup with tender matzo balls and vegetables.
Serves: 6 people
Preparation time: 60 min
Ingredients
- Chicken broth – 2 l
- Carrots – 3
- Celery stalks – 3
- Onion – 1
- Parsley – 2 tbsp
- Matzo meal – 120 g
- Eggs – 2
- Oil or schmaltz – 3 tbsp
- Black pepper – to taste
Method
STEP 1 Simmer the broth with carrot, celery and onion.
STEP 2 Mix matzo meal, eggs, oil and pepper into a dough and chill.
STEP 3 Form balls and cook them gently in simmering broth.
STEP 4 Add parsley and serve the soup hot.
