A proper Martino is fast, messy in the best possible way and nicely hot with ketchup, Worcestershire, cayenne and Tabasco over creamy filet americain and crunchy pickles.
Serves: 2 people
Preparation time: 30 min
Ingredients
- Filet americain – 150 ml
- Cayenne pepper – 1 pinch
- Tabasco – a few drops
- Ketchup – 5 tbsp
- Worcestershire sauce – 1 tbsp
- Black pepper – 1 pinch
- Small shallot – 1/2
- Gherkins – a few
- Spring onion – 1 stalk
- Cherry tomatoes – 10
- Baguette – 1
- Garden cress – 1 handful
Method
1. Mix the filet americain with cayenne, Tabasco, ketchup and Worcestershire sauce. Taste and season with black pepper.
2. Finely chop the shallot, slice the gherkins, cut the spring onion into rings and quarter the cherry tomatoes.
3. Split the baguette open, spread generously with the Martino mixture and finish with shallot, gherkins, spring onion, cherry tomatoes and garden cress. Serve at once.
