This crisp Greek lettuce salad keeps things beautifully simple with romaine, spring onion, dill, mint, feta and a sharp lemon dressing that wakes everything up.

Ingredients
- Romaine hearts – 2
- Green onions – 4
- Dill – 1/2 bunch
- Mint – 1/2 bunch
- Crumbled feta – 1/2 cup
- Lemon juice – juice of 1 large lemon
- Dried oregano – 1/2 tsp
- Extra virgin olive oil – 1/3 cup
- Salt – to taste
Method
Thinly slice the romaine and give it a quick soak in ice water for a few minutes so it turns extra crisp. Drain and dry very well. Finely chop the green onions, dill and mint. Whisk the lemon juice with salt, oregano and olive oil into a bright dressing. Toss the lettuce with the herbs and feta, dress at the last moment and serve right away while everything is still crunchy.
