This fruity Christmas log leans into mango and passion fruit for a lighter, more tropical finish that still feels festive. It is a lovely option for anyone who wants a Christmas dessert with brightness and colour instead of only chocolate and spice.

Serves: 8 people

Ingredients

  • Eggs – 4
  • Sugar – 120 g
  • Flour – 100 g
  • Lemon zest – from 1 lemon
  • Mango – 2
  • Passion fruit – 3
  • Whipping cream – 300 ml
  • Mascarpone – 150 g
  • Gelatin – 3 leaves
  • Powdered sugar – 60 g

Method

Whisk the egg whites stiff while gradually adding the sugar, then fold in the yolks, flour and citrus zest for a light sponge.
Bake the sponge in a lined tray for about 12 minutes and cover it with a damp towel as soon as it comes out of the oven.
Blend the mango flesh with the passion fruit pulp and warm part of it to dissolve the soaked gelatin.
Fold the fruit purée into whipped cream and mascarpone to make a soft tropical filling.
Unroll the cooled sponge, spread over the filling and roll it up into a neat log.
Chill until firm, then decorate with extra fruit, cream or a little icing sugar if you like.
Slice with a hot knife for the cleanest festive presentation.
