Firm manchego paired with sweet quince paste is simple, elegant and a perfect example of how Spanish tapas can shine with almost no cooking at all.

Ingredients
- Manchego cheese – 250 g
- Quince paste – 180 g
- Toasted almonds or walnuts – 60 g
Method
STEP 1
Remove the manchego from the refrigerator about 20 minutes before serving so the texture and aroma can open up properly.
STEP 2
Cut the cheese into thin wedges or rectangles and cut the quince paste into similarly sized pieces.
STEP 3
Arrange the manchego and quince paste on a board or platter, alternating them or placing them side by side.
STEP 4
Scatter the toasted nuts around the platter for a little extra crunch.
STEP 5
Serve at room temperature so guests can combine the cheese and quince themselves.
