Sopa mallorquina is a vegetable soup from Mallorca built with thin slices of bread. It is lightly brothy, fragrant and almost stew-like in texture.
Serves: 4 people

Ingredients
- olive oil – 3 tbsp
- onion, chopped – 1 large
- leek, sliced – 1
- green bell pepper, diced – 1
- tomatoes, diced – 3
- cauliflower florets – 9 oz
- spinach – 5 oz
- vegetable stock – 4 cups
- day-old bread, thinly sliced – 7 oz
- paprika – 1 tsp
- fresh parsley – 2 tbsp
- salt – to taste
- black pepper – to taste
Method
1. Heat the olive oil in a pot and cook the onion, leek and pepper for 6 minutes.
2. Add the tomatoes, cauliflower and paprika and cook for 5 minutes.
3. Pour in the stock and simmer the vegetables for 12 minutes.
4. Stir in the spinach and parsley and season with salt and pepper.
5. Layer the bread and soup in a serving dish until everything is used. Let it stand for 5 minutes so the bread absorbs the flavours, then serve.
