A hearty low-sodium stew with lentils, tomatoes, zucchini and warming spices.
Serves: 4 people

Ingredients
- Brown lentils – 250 g
- Onion – 1
- Carrots – 2
- Zucchini – 1
- Bell pepper – 1
- Garlic – 3 cloves
- No-salt diced tomatoes – 1 can
- Unsalted vegetable stock – 1 l
- Cumin – 1 tsp
- Smoked paprika – 1 tsp
- Olive oil – 1 tbsp
- Parsley – 15 g
Method
Cook the onion, carrots, pepper and garlic in olive oil.
Add lentils, tomatoes, stock, cumin and smoked paprika and simmer until nearly tender.
Add zucchini and cook until soft. Finish with parsley and black pepper.
