Loaded Baked Potato Salad

A rich picnic-style salad inspired by loaded baked potatoes with bacon, cheddar and sour cream.

Serves: 6 people

Preparation time: 25 min

Ingredients

  • Potatoes – 1.3 kg
  • Bacon – 200 g
  • Cheddar – 150 g
  • Sour cream – 180 ml
  • Mayonnaise – 120 ml
  • Spring onions – 4
  • Apple cider vinegar – 1 tbsp
  • Garlic powder – 1 tsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Roast or boil the potatoes until tender, then cool and cube them.
STEP 2
Cook the bacon until crisp. Mix sour cream, mayonnaise, vinegar and garlic powder.
STEP 3
Fold the potatoes with bacon, cheddar and sliced spring onions into the dressing.
STEP 4
Season and chill before serving.
