Shorbat adas is a classic Levantine red lentil soup with onion, carrot and warm spices. It is silky, fragrant and one of the easiest soups to make for a quick meal.
Serves: 4 people
Preparation time: 5 min
Ingredients
- olive oil – 1 tbsp
- onion, chopped – 1 large
- carrots, sliced – 2
- red lentils, rinsed – 1 1/2 cups
- ground cumin – 1 1/2 tsp
- ground turmeric – 1/2 tsp
- vegetable stock or water – 7 cups
- salt – to taste
- black pepper – to taste
- lemon juice – 2 tbsp
- parsley, chopped – 2 tbsp
Method
1. Heat the olive oil in a pot and cook the onion and carrots until slightly softened.
2. Add the red lentils, cumin and turmeric and stir for 1 minute.
3. Pour in the stock or water and simmer until the lentils are very soft.
4. Blend the soup until smooth and season with salt, pepper and lemon juice.
5. Serve with parsley on top.
