Brown lentils make a hearty vegetarian Sloppy Joe with plenty of texture and flavor.

Serves: 4 people

Preparation time: 15 min

Ingredients

  • cooked brown lentils – 3 cups
  • onion, chopped – 1 medium
  • red bell pepper, chopped – 1/2
  • garlic, minced – 2 cloves
  • tomato sauce – 1 cup
  • tomato paste – 2 tbsp
  • soy sauce – 1 tbsp
  • maple syrup – 1 tbsp
  • olive oil – 1 tbsp
  • smoked paprika – 1 tsp
  • salt – 3/4 tsp
  • black pepper – 1/2 tsp
  • hamburger buns – 4

Method

1. Sauté onion, pepper and garlic in olive oil until tender.
2. Stir in the lentils, tomato sauce, tomato paste, soy sauce and maple syrup.
3. Add smoked paprika, salt and pepper and simmer until thick.
4. Mash a small part of the lentils for a more classic texture if you like.
5. Serve on buns while hot.
