A bright lemon loaf gives a rich coffee table some welcome freshness and cuts beautifully into small slices.

Ingredients
- Butter – 180 g
- Sugar – 180 g
- Eggs – 3
- Flour – 220 g
- Baking powder – 2 tsp
- Greek yogurt – 120 g
- Lemon zest – 2 tbsp
- Lemon juice – 3 tbsp
- Icing sugar – 100 g
Method
Preheat the oven to 175°C and line a loaf tin. Beat the butter and sugar until fluffy. Add the eggs one by one. Fold in the flour and baking powder, then stir in the yogurt, lemon zest and 2 tablespoons of lemon juice. Spoon the batter into the tin and bake for 45 to 50 minutes until cooked through. Mix the icing sugar with the remaining lemon juice into a glaze and spoon it over the cooled cake. Slice once the glaze has set.
