Grey shrimp add a salty coastal touch to leek stoemp, and a poached egg turns the whole plate extra luxurious.

Ingredients
- Potatoes – 800 g
- Leeks – 4
- Grey shrimp – 150 g
- Eggs – 4
- Butter – 60 g
- Milk – 100 ml
- Nutmeg – 1 pinch
- White vinegar – 1 tbsp
Method
1. Cook the potatoes until soft and stew the sliced leeks gently in butter until silky and sweet. 2. Mash the potatoes with milk, butter and nutmeg and fold in the leeks. 3. Poach the eggs gently in water with a splash of vinegar and pat them dry. 4. Warm the shrimp very briefly, then serve them over the leek stoemp with the poached eggs on top.
