Leek stoemp with salmon

Leek stoemp and salmon are a graceful match, with the sweetness of the leeks balancing the rich fish beautifully.

Serves: 4 people

Preparation time: 40 min

Ingredients

  • Potatoes – 800 g
  • Leeks – 6
  • Salmon fillets – 4
  • Butter – 60 g
  • Milk – 100 ml
  • Lemon – 1
  • Dill – 1 tsp
  • Grey shrimp – 50 g

Method

1. Cook the potatoes until tender and stew the leeks in butter until completely soft. 2. Mash the potatoes with milk, butter and a little lemon zest, then fold in the leeks. 3. Season the salmon and cook it in a pan or oven until just done. 4. Serve the salmon on the leek stoemp and finish with dill, a squeeze of lemon and, if you like, a few grey shrimp.
