Ingredients
- Rice noodles – 250 g
- Chicken breast or prawns – 300 g
- Coconut milk – 500 ml
- Chicken stock – 700 ml
- Laksa paste or red curry paste – 2 tbsp
- Garlic cloves – 2
- Ginger – 2 cm
- Bean sprouts – 150 g
- Spring onions – 2
- Lime – 1
Method
STEP 1
Cook the noodles according to the package.
STEP 2
Fry garlic and ginger, then add laksa paste.
STEP 3
Pour in stock and coconut milk and bring to a gentle simmer.
STEP 4
Add chicken or prawns and cook until done.
STEP 5
Serve the soup over noodles with bean sprouts, spring onion and lime.
