Lakota Bison and Wild Rice Soup

A hearty prairie soup with bison and wild rice that feels warming, robust and perfect for long autumn evenings.

Serves: 6 people

Preparation time: 25 min

Ingredients

  • Ground bison – 500 g
  • Cooked wild rice – 300 g
  • Onion, chopped – 1
  • Green bell pepper, chopped – 1
  • Diced tomatoes – 400 g
  • Tomato sauce – 250 ml
  • Water – 750 ml
  • Black pepper – 1/2 tsp
  • Salt – 1 tsp

Method

Brown the bison in a soup pot over medium heat.
Add the onion and green pepper and cook until softened.
Stir in the tomatoes, tomato sauce and water.
Bring the soup to a simmer and cook for 15 minutes.
Add the cooked wild rice and simmer for another 10 minutes.
Season with salt and pepper and serve hot.
