A hearty prairie soup with bison and wild rice that feels warming, robust and perfect for long autumn evenings.

Ingredients
- Ground bison – 500 g
- Cooked wild rice – 300 g
- Onion, chopped – 1
- Green bell pepper, chopped – 1
- Diced tomatoes – 400 g
- Tomato sauce – 250 ml
- Water – 750 ml
- Black pepper – 1/2 tsp
- Salt – 1 tsp
Method
Brown the bison in a soup pot over medium heat.
Add the onion and green pepper and cook until softened.
Stir in the tomatoes, tomato sauce and water.
Bring the soup to a simmer and cook for 15 minutes.
Add the cooked wild rice and simmer for another 10 minutes.
Season with salt and pepper and serve hot.
