This is a simple Greek cauliflower salad where the vegetable stays central and the dressing is no more than olive oil, lemon, salt and pepper.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Cauliflower – 1
  • Extra virgin olive oil – to taste
  • Lemon juice – to taste
  • Salt – to taste
  • Pepper – to taste

Method

Trim the cauliflower and cook it until just tender, whether by boiling or steaming. Let it cool slightly and divide it into large florets. Whisk olive oil and lemon juice until the dressing turns slightly opaque, then pour it over the cauliflower. Season with salt and pepper and serve at room temperature or chilled.
