Kosher-style chicken matzo ball soup

A classic Jewish-style soup with chicken, vegetables and fluffy matzo balls.

Serves: 6 people

Preparation time: 60 min

Ingredients

  • Chicken pieces – 1 kg
  • Carrots – 3
  • Celery – 3 stalks
  • Onion – 1
  • Parsley – 15 g
  • Water – 2 l
  • Matzo meal – 120 g
  • Eggs – 2
  • Chicken fat or oil – 3 tbsp
  • Black pepper – to taste

Method

Simmer the chicken with carrot, celery, onion and parsley to make a clear broth.
Mix matzo meal with eggs and fat or oil and chill. Shape balls and cook them in simmering water or broth.
Shred some chicken back into the soup and serve with the matzo balls.
