A vegetable pizza can still feel playful and familiar when the toppings are colourful, finely cut and baked under a blanket of cheese. This is an easy way to put a real homemade pizza on the table while quietly working more vegetables into a child-friendly meal.
Serves: 4 people
Preparation time: 90 min
Ingredients
- Pizza dough – 1 large ball or 4 small portions
- Tomato sauce – 200 ml
- Mozzarella or grated cheese – 200 g
- Red pepper – 1 small, diced
- Courgette – 1 small, finely chopped
- Sweetcorn – 100 g
- Cherry tomatoes – 8, halved
- Olive oil – 1 tbsp
- Dried oregano – 1 tsp
- Salt – to taste
Method
step 1
Heat the oven well in advance so the pizza bakes fast and the crust stays light rather than heavy.
step 2
Roll out the dough into one large base or several small pizzas. Transfer it to a tray or hot pizza stone.
step 3
Spread over the tomato sauce, leaving a small border around the edge so the crust can puff and brown.
step 4
Scatter the vegetables evenly over the top, keeping the pieces fairly small so they soften nicely in the oven.
step 5
Finish with the cheese, a little oregano and a light drizzle of olive oil, then bake until the base is cooked and the top is bubbling.
step 6
Let the pizza rest briefly before slicing. Children usually find it easier to eat when it is warm rather than piping hot.
