A luxurious keto plate with salmon, asparagus and buttery lemon hollandaise.

Ingredients
- Salmon fillets – 4
- Green asparagus – 500 g
- Egg yolks – 3
- Butter – 150 g
- Lemon – 1
- Dijon mustard – 1 tsp
- Olive oil – 1 tbsp
- Salt – to taste
- White pepper – to taste
Method
Roast or pan-fry the salmon and asparagus until just cooked.
Melt the butter. Whisk egg yolks with lemon juice and mustard over gentle heat, then slowly add butter to make a quick hollandaise.
Serve the salmon and asparagus with the sauce.
