Kedgeree is a savoury rice dish in which seasoned rice, fish and egg come together in a hearty but approachable meal.
What is kedgeree?
Kedgeree is a British dish with influences from colonial cooking. The combination of rice, spices, fish and egg makes it nourishing, aromatic and surprisingly light.

Ingredients
- basmati rice – 1 1/2 cups
- smoked haddock – 12 oz
- eggs – 4
- onion, chopped – 1 medium
- butter – 2 tbsp
- curry powder – 2 tsp
- milk – 1 cup
- water – 1 cup
- parsley, chopped – 2 tbsp
- lemon juice – 1 tbsp
- salt – 1/2 tsp
- black pepper – 1/2 tsp
Method
1. Cook the rice until tender and keep it warm.
2. Poach the smoked fish in the milk and water, then flake it into pieces.
3. Boil the eggs until firm and cut them into wedges.
4. Cook the onion in butter, stir in the curry powder and fold in the rice and fish.
5. Finish with parsley, lemon juice and the eggs.
