Kapsalon with lamb shawarma

Kapsalon is one of those unmistakable Dutch fast-food dishes that turns fries, meat, melted cheese, salad and sauce into something much bigger than the sum of its parts. A lamb version feels especially rich and satisfying, but it still depends on keeping the lettuce and sauces fresh.

Serves: 4 people

Preparation time: 90 min

Ingredients

  • Fries – 1 kg
  • Lamb strips or lamb shawarma meat – 600 g
  • Shawarma spices – 2 tbsp
  • Olive oil – 2 tbsp
  • Young cheese, sliced or grated – 200 g
  • Iceberg lettuce – 1/2 head
  • Tomatoes – 2
  • Cucumber – 1/2
  • Red onion – 1
  • Garlic sauce – to taste
  • Sambal or chilli sauce – to taste

Method

1. Bake or fry the fries until golden and crisp. Keep them hot while you prepare the rest.
2. Season the lamb with shawarma spices, olive oil, salt and pepper, then cook it in a hot pan until browned and cooked through.
3. Spread the fries in an ovenproof dish, top with the lamb and cover with the cheese.
4. Grill briefly until the cheese has melted over the hot meat and fries.
5. Finish with shredded lettuce, tomato, cucumber and red onion, then spoon over garlic sauce and a little sambal.
