Kale soup with smoked sausage is a sturdy Dutch bowl of winter comfort, bringing together potatoes, greens and sausage. It is nourishing, straightforward and deeply warming.

Ingredients
- butter – 1 tbsp
- bacon, diced – 4 oz
- onion, chopped – 1 medium
- leek, sliced – 1 large
- curly kale, shredded – 6 cups
- potatoes, diced – 2 medium
- smoked sausage, sliced – 9 oz
- chicken stock – 6 cups
- bay leaf – 1
- black pepper – 1/2 tsp
Method
1. Cook the bacon in a soup pot until lightly crisp, then add the onion and leek and cook until softened.
2. Add the potatoes and curly kale and stir for 2 minutes so the vegetables start to wilt and take on flavour.
3. Pour in the stock, add the bay leaf, and simmer until the potatoes are tender.
4. Add the sliced smoked sausage and heat it through gently in the soup for 5 minutes.
5. Season with pepper and serve the soup hot.
