Sake, ginger and a little soy give mussels a delicate savoury broth that tastes clean, lightly sweet and deeply comforting.

Ingredients
- Fresh mussels – 2 kg
- Sake – 250 ml
- Water – 100 ml
- Fresh ginger – 25 g, julienned
- Garlic – 2 cloves, sliced
- Soy sauce – 1 tbsp
- Spring onions – 3, finely sliced
- Sesame oil – 1 tsp
Method
STEP 1
Rinse and sort the mussels, then put a wide pot on the stove.
STEP 2
Add the sake, water, ginger and garlic to the pot and bring the liquid to a boil.
STEP 3
Add the mussels, cover and steam until the shells open.
STEP 4
Season the broth with soy sauce and sesame oil, scatter over the spring onions and serve right away.
