Japanese miso soup with tofu and wakame

This classic Japanese miso soup is light, savory and perfect as a small meal or starter. Tofu and wakame make it nourishing without taking away its delicate character.

Serves: 4 people

Ingredients

  • water – 5 cups
  • white miso paste – 4 tbsp
  • firm tofu, cubed – 9 oz
  • dried wakame – 2 tbsp
  • green onions, sliced – 3
  • soy sauce – 1 tsp

Method

1. Bring the water almost to a boil in a saucepan. Add the wakame and let it soak in the hot liquid for 2 minutes.
2. Lift a little of the hot liquid into a bowl and whisk in the miso until smooth. Return this mixture to the pan.
3. Add the tofu and soy sauce and warm the soup for 2 more minutes over low heat. Do not let the soup boil once the miso has been added.
4. Divide the soup between bowls and scatter the green onions over the top. Serve immediately.
