Jambalaya is a hearty one-pan rice dish with chicken, sausage, vegetables and bold Cajun seasoning.
Serves: 4 people

Ingredients
- long-grain rice – 1 1/2 cups
- chicken thigh, diced – 1 lb
- smoked sausage, sliced – 12 oz
- onion, chopped – 1 large
- celery, chopped – 2 stalks
- green bell pepper, chopped – 1
- garlic, minced – 3 cloves
- crushed tomatoes – 14 oz
- chicken stock – 3 cups
- paprika – 2 tsp
- dried thyme – 1 tsp
- cayenne pepper – 1/4 tsp
- olive oil – 2 tbsp
- salt – 1 tsp
- black pepper – 1/2 tsp
- parsley, chopped – 2 tbsp
Method
1. Heat the oil in a large pan and brown the chicken and sausage in batches.
2. Add onion, celery, bell pepper and garlic and cook until softened.
3. Stir in rice, tomatoes, stock and spices, then bring to a gentle boil.
4. Cover and simmer for 20 to 25 minutes until the rice is tender.
5. Rest for 5 minutes, fluff with a fork and finish with parsley.
