This Italian-style roast layers garlic, bay and fennel into the meat before it is rolled and roasted. The result is fragrant, juicy and crisp in all the places where a celebratory pork roast should be.

Ingredients
- Pork loin with skin – 1.5 kg
- Garlic – 4 cloves
- Bay leaves – 3
- Fennel seeds – 1 tbsp
- Sea salt – 2 tsp
- Black pepper – 1 tsp
- Olive oil – 1 tbsp
Method
1. Pour boiling water over the skin or dry it extremely well so the crackling starts from a firm, tight surface.
2. Crush the garlic, bay, fennel, salt and pepper into a paste and rub it into the flesh side of the pork.
3. Roll the meat tightly, tie it at intervals and roast it until the crackling is crisp and the centre just cooked.
4. Rest the pork for 15 minutes before carving so the slices stay neat and juicy.
5. Serve with roasted vegetables or beans and a sharp salad.
