Italian mini croques are a good bridge between familiar toasties and something a little more festive. The crisp bread, melting mozzarella and punchy tapenade flavour make them excellent for children’s parties where adults are snacking too.

Serves: 4 people

Preparation time: 13 min

Ingredients

  • Focaccia – 1 small loaf
  • Tapenade – 2 tbsp
  • Mozzarella – 1 ball, sliced
  • Parmesan – 30 g, grated
  • Ham or salami – 4 slices
  • Olive oil – 1 tbsp

Method

Slice the focaccia horizontally and cut it into small party-size pieces. This bread gives a softer interior than ordinary sandwich bread and stays pleasant after grilling.

Spread the base pieces with tapenade and top with mozzarella, a little parmesan and ham or salami.

Close the sandwiches, brush lightly with olive oil and toast or bake until the bread turns crisp and the cheese melts.

Cut into smaller portions if needed and serve warm while the centres are still stretchy and fragrant.
