Irish lamb stew is a simple but hearty stew in which lamb and vegetables cook gently together.

The strength of this stew is not complicated technique, but slow cooking. The lamb flavours the broth, while earthy vegetables make the dish hearty and homely.

Ingredients
- lamb shoulder, cubed – 2 lb
- potatoes, chunked – 1 3/4 lb
- carrots, sliced – 3
- onions, quartered – 2
- lamb or beef broth – 3 cups
- fresh thyme – 3 sprigs
- bay leaf – 1
- parsley, chopped – 2 tbsp
- salt – 1 1/2 tsp
- black pepper – 1/2 tsp
- butter – 1 tbsp
Method
1. Melt the butter in a stew pot and brown the lamb briefly.
2. Add the onion and carrots and cook for 3 minutes.
3. Pour in the broth and add the thyme, bay leaf, salt and pepper.
4. Let the meat simmer gently for 45 minutes.
5. Add the potatoes and cook for another 35 minutes until everything is tender.
6. Finish with parsley and serve hot.
