Freshly fried spring rolls bring crisp pastry and savory filling, exactly the contrast a large rice table needs.

Ingredients
- Spring roll wrappers – 12
- Cabbage – 200 g
- Carrot – 1
- Bean sprouts – 150 g
- Garlic – 2 cloves
- Soy sauce – 1 tbsp
- Oil – for frying
Method
Stir-fry the cabbage, carrot, bean sprouts and garlic with the soy sauce until the filling is just dry enough to hold together.
Let the filling cool completely.
Fill and roll the wrappers tightly.
Fry the rolls until golden and crisp and drain them well before serving.
