Soto mie is a fragrant Indonesian noodle soup with beef broth, noodles, vegetables and bright herbs, often sharpened with lime.

Serves: 6 people

Preparation time: 60 min

Ingredients

  • beef chuck, cubed – 1 lb
  • egg noodles – 10 oz
  • beef stock – 9 cups
  • shallots, chopped – 3
  • garlic, minced – 3 cloves
  • ginger, sliced – 1 inch
  • lemongrass, bruised – 1 stalk
  • cabbage, shredded – 2 cups
  • tomato, wedges – 2
  • celery leaves or cilantro – 1/4 cup
  • lime wedges – for serving
  • soy sauce – 2 tbsp
  • salt – to taste

Method

1. Cook the beef in the stock with the shallots, garlic, ginger and lemongrass until tender.
2. Remove the beef, slice it if needed and return it to the broth.
3. Season the broth with soy sauce and salt.
4. Cook the noodles separately and place them in bowls with the shredded cabbage and tomato wedges.
5. Ladle over the hot broth and beef and finish with celery leaves or cilantro and lime.
