A velvety Indian spinach soup with onion, garlic and soft aromatic spices.
Serves: 4 people

Ingredients
- ghee or butter – 1 tbsp
- onion, chopped – 1
- garlic, chopped – 3 cloves
- potato, diced – 1 small
- baby spinach – 10 oz
- vegetable stock – 4 cups
- ground cumin – 1/2 tsp
- ground coriander – 1/2 tsp
- milk – 1/2 cup
- lemon juice – 1 tsp
- salt – to taste
- black pepper – to taste
Method
1. Heat the ghee and cook the onion and garlic for 3 minutes.
2. Add the potato, spinach, stock, cumin and coriander and simmer until the potato is tender.
3. Blend the soup until completely smooth.
4. Return it to the pan and stir in the milk and lemon juice without letting it boil hard.
5. Season with salt and black pepper and serve warm.
