Indian chickpeas with poached eggs

Spiced chickpeas and softly poached eggs make a quick meat-free dinner with plenty of comfort and flavour.

Serves: 2 people

Preparation time: 15 min

Ingredients

  • vegetable oil – 1 tbsp
  • onion – 1
  • garlic – 2 cloves
  • ginger – 1 thumb-sized piece
  • garam masala – 1 tsp
  • ground cumin – 1 tsp
  • chopped tomatoes – 400 g
  • chickpeas – 400 g
  • eggs – 4
  • coriander – 1 handful

Method

STEP 1
Heat the oil in a frying pan or shallow saucepan and soften the chopped onion for a few minutes.
STEP 2
Add the garlic, ginger, garam masala and cumin and cook briefly until fragrant.
STEP 3
Stir in the tomatoes and chickpeas and simmer until the sauce thickens slightly.
STEP 4
Make four small hollows in the sauce and crack an egg into each one.
STEP 5
Cover the pan and cook gently until the whites are set but the yolks are still soft.
STEP 6
Scatter over the coriander and serve straight from the pan.
