Inari sushi with seasoned rice

Sweet-savory tofu pockets filled with vinegared rice are soft, comforting and perfect for lunch boxes or buffets.

Serves: 4 people

Preparation time: 180 min

Ingredients

  • Japanese short-grain rice – 300 g
  • Rice vinegar – 60 ml
  • Sugar – 2 tbsp
  • Salt – 1 tsp
  • Seasoned tofu pockets – 12
  • Toasted sesame seeds – 1 tbsp
  • Edamame – 80 g

Method

Cook and season the sushi rice and let it cool.
Mix the rice with sesame seeds and shelled edamame.
Open the seasoned tofu pockets carefully and stuff them generously with the rice mixture.
Serve chilled or at room temperature.
