Briny, glossy and celebratory, these little battleship sushi bites combine delicate rice with jewel-like salmon roe for a true sushi-counter classic.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 2
- Salmon roe – 120 g
- Cucumber – 1/4
Method
Season the rice and cool. Cut the nori into strips. Shape the rice into small oval mounds, wrap each with a strip of nori to form a cup and fill with salmon roe; garnish with tiny cucumber cubes if desired.
