Ikan Pepes is a indonesian fish dish with a character of its own. Fish steamed or baked in banana leaf with herbs, chilli and lime, aromatic and beautifully moist. It is a useful recipe for exploring Asian flavours through clear, approachable cooking.

What is Ikan Pepes?

Ikan Pepes is not a standard everyday dish in many Western kitchens, which is exactly why it is interesting. At its core, it is fish steamed or baked in banana leaf with herbs, chilli and lime, aromatic and beautifully moist. The key is balance: savoury, aromatic, fresh and sometimes sweet or spicy. Serve it with rice, noodles, vegetables or a crisp cucumber side so the flavours can stand out clearly.

Ingredients

  • White fish fillets – 600 g
  • Shallots – 3
  • Garlic cloves – 3
  • Fresh ginger – 2 cm
  • Red chilli – 1
  • Turmeric – 1 tsp
  • Lime juice – 1 tbsp
  • Banana leaves or baking paper – as needed
  • Fresh basil – handful
  • Salt – to taste

Method

STEP 1
Blend shallots, garlic, ginger, chilli, turmeric and lime into a marinade.

STEP 2
Coat the fish with the marinade and basil.

STEP 3
Wrap the portions tightly in banana leaf or baking paper.

STEP 4
Steam for 20 minutes or bake for about 25 minutes at 180 degrees.

STEP 5
Serve hot with rice.
