A hearty Belgian mash-stew of potatoes, root vegetables and meat.
Serves: 4 people
Preparation time: 30 min
Ingredients
- floury potatoes – 2 lb
- carrots – 4
- leeks – 2
- turnip – 1 small
- onion – 1
- celery stalks – 2
- smoked bacon – 7 oz
- pork sausage – 4
- butter – 2 tbsp
- stock – 3 cups
- nutmeg – 1 pinch
- salt – to taste
- black pepper – to taste
Method
1. Cut the vegetables and potatoes into chunks.
2. Cook the bacon and sausages gently in a large pot until lightly colored. Remove the sausages for later.
3. Add the vegetables, potatoes, butter and stock. Simmer for 25 to 30 minutes until everything is very tender.
4. Return the sausages to the pot to heat through.
5. Mash the potatoes and vegetables roughly, leaving some texture, and season with nutmeg, salt and pepper.
6. Serve the hutsepot with the bacon and sausages on top.
