Jókai bean soup is a richer Hungarian bean soup with sausage, smoked meat and vegetables in a paprika-spiced broth.

Ingredients
- dried speckled beans – 1 1/2 cups
- smoked sausage, sliced – 10 oz
- smoked pork, diced – 8 oz
- yellow onion, chopped – 1
- garlic, minced – 3 cloves
- carrot, diced – 2
- celeriac, diced – 1 cup
- paprika – 1 1/2 tsp
- beef stock – 9 cups
- sour cream – 1/2 cup
- flour – 1 tbsp
- parsley, chopped – 1/4 cup
- salt – to taste
- black pepper – to taste
Method
1. Soak the beans overnight and drain them.
2. Cook the onion, garlic, smoked pork and sausage for several minutes until fragrant.
3. Add the beans, carrot, celeriac, paprika and stock and simmer until everything is tender.
4. Mix the sour cream with the flour and a little hot soup, then stir it back into the pot to lightly thicken the broth.
5. Season with salt and pepper and finish with parsley.
