This modern springroll version is built on contrast: salty halloumi, melting mozzarella and spicy honey in a wrapper that crisps up fast in fryer or air fryer.

Ingredients
- Honey – 2 tbsp
- Chilli flakes – 1 tsp
- Halloumi – 1 pack
- Grated mozzarella – 50 g
- Spring roll wrappers – 12
- Parsley – 1 handful
- Extra honey – for finishing
Method
1. Stir the honey with the chilli flakes and cut the halloumi into slim batons.
2. Place halloumi and a little mozzarella on each wrapper and drizzle over a little hot honey.
3. Roll the springrolls tightly and cook them in the fryer or air fryer until golden and crisp.
4. Finish with extra honey and parsley and serve them while the cheese is still soft inside.
