Honey and mustard give this French-style pork roast a lovely sweet-sharp glaze without overwhelming the meat. It is easy to serve to a table, and the sauce settles beautifully into the potatoes alongside it.

Ingredients
- Pork roast – 1 kg
- Honey – 2 tbsp
- Wholegrain mustard – 2 tbsp
- White wine – 240 ml
- Onion – 1
- Thyme – 2 sprigs
- Potatoes – 800 g
- Salt and black pepper – to taste
Method
1. Mix the honey and mustard into a glaze and coat the pork roast with it.
2. Arrange the meat with onion and thyme in a roasting dish and add the white wine around it.
3. Roast until the glaze turns shiny and the pork is cooked through, turning the potatoes in the juices if you cook them alongside.
4. Rest the meat before slicing so the glaze stays on the roast instead of running away with the juices.
5. Serve with the pan sauce and the softened, flavourful potatoes.
