A good tuna salad needs freshness as well as creaminess, and this version gets both from herbs, crunchy vegetables and a light dressing. It is the kind of homemade sandwich filling that tastes far better than the ready-made tub.

Ingredients
- Tuna – 2 cans, drained
- Greek yogurt – 3 tbsp
- Mayonnaise – 2 tbsp
- Cornichons – 2 tbsp, finely chopped
- Red onion – 0.5 small, finely chopped
- Yellow pepper – 0.5 small, finely diced
- Parsley – 2 tbsp, chopped
- Dill – 1 tbsp, chopped
- Lemon juice – 1 tbsp
- Black pepper – to taste
Method
STEP 1
Flake the tuna into a bowl and check that there are no large hard pieces left in the fish.
STEP 2
Mix the yogurt, mayonnaise, lemon juice and black pepper into a light creamy dressing.
STEP 3
Add the cornichons, onion, pepper, parsley and dill and stir everything through the tuna.
STEP 4
Let the salad rest for a few minutes so the flavours can come together, then spread it on rolls, toast or brown bread.
