Homemade herb cheese is simple, fresh and exactly the sort of spread that makes good bread even better. The soft cheese takes on the flavour of the herbs beautifully and feels a little more special than plain cream cheese.

Serves: 4 people

Preparation time: 20 min

Ingredients

  • Soft sheep cheese or fresh cheese – 250 g
  • Chives – 2 tbsp, finely chopped
  • Parsley – 1 tbsp, finely chopped
  • Thyme – 1 tsp, finely chopped
  • Lemon zest – 0.5 tsp
  • Olive oil – 1 tbsp
  • Salt and black pepper – to taste

Method

STEP 1
Place the soft cheese in a bowl and loosen it with a spoon so it becomes easy to mix.
STEP 2
Add the chives, parsley, thyme, lemon zest and olive oil and stir until the herbs are evenly distributed.
STEP 3
Season with salt and black pepper and let the spread rest for a little while so the herbs perfume the cheese.
STEP 4
Use the herb cheese generously on fresh bread, dark rye or crisp toast.
