High-fiber black bean and sweet potato soup

A rich high-fiber soup with black beans, sweet potato, tomatoes and lime.

Serves: 4 people

Preparation time: 35 min

Ingredients

  • Black beans – 2 cans
  • Sweet potatoes – 500 g
  • Onion – 1
  • Garlic – 3 cloves
  • Diced tomatoes – 1 can
  • Vegetable stock – 1.2 l
  • Cumin – 1 tsp
  • Smoked paprika – 1 tsp
  • Lime – 1
  • Olive oil – 1 tbsp
  • Coriander – 10 g

Method

Cook the onion and garlic in olive oil. Add sweet potato, tomatoes, stock and spices and simmer until tender.
Add the beans and cook briefly. Blend half the soup for a thicker texture and finish with lime and coriander.
