A low-sodium dinner built on herbs, lemon and garlic instead of salt.

Ingredients
- Chicken thighs – 6
- Carrots – 4
- Zucchini – 2
- Red onion – 2
- Lemon – 1
- Olive oil – 2 tbsp
- Rosemary – 1 tsp
- Thyme – 1 tsp
- Garlic – 3 cloves
Method
STEP 1 Cut the vegetables and toss with oil, garlic, herbs and pepper.
STEP 2 Place the chicken on top and add lemon wedges.
STEP 3 Roast at 200°C for 35 to 40 minutes.
STEP 4 Serve with the pan juices.
