Hearty pasta soup is a quick, clever meal soup for days when you want something comforting without much effort. Tortellini, vegetables and tomato broth make it filling, colourful and weeknight-friendly.

Ingredients
- Olive oil – 1 tbsp
- Carrots – 2, chopped
- Onion – 1 large, finely chopped
- Vegetable stock – 1 litre
- Chopped tomatoes – 400 g
- Frozen peas and beans – 200 g
- Fresh filled tortellini – 250 g
- Basil leaves – a handful
- Parmesan – to serve
Method
step 1
Cook the carrots and onion in olive oil until they soften.
step 2
Add the stock and tomatoes and bring the soup to a lively simmer.
step 3
Stir in the peas and beans, then add the tortellini and cook until tender.
step 4
Tear in the basil at the end so the soup stays fresh and bright.
step 5
Serve with a little parmesan on top.
