Hearty hamburger soup is a practical, old-school meal soup built around ground beef, barley and lots of vegetables. It cooks into a generous pot that tastes even better after the flavours have had time to settle.

Ingredients
- Ground beef – 700 g
- Onion – 1, minced
- Carrots – 4, minced
- Celery – 3 ribs, thinly sliced
- Pearl barley – 100 g
- Beef broth – 900 ml
- Tomatoes – 800 g, canned diced
- Tomato juice – 500 ml
- Frozen mixed vegetables – 300 g
- Garlic – 2 cloves, chopped
- Dried basil – 1 tsp
- Salt and pepper – to taste
Method

Brown the beef in a large soup pot and break it up well, then drain off excess fat if needed.

Add the onion, carrots, celery and garlic and cook until the vegetables begin to soften.

Stir in the barley, broth, tomatoes and tomato juice, then bring everything to a gentle boil.
step 4
Lower the heat and simmer until the barley is tender and the soup tastes rich and rounded.

Add the mixed vegetables for the final few minutes, season with basil, salt and pepper, and serve piping hot.
