A reliable coffee table savory: sweet leek, tender ham and a creamy egg filling baked in a crisp crust.

Ingredients
- Shortcrust pastry – 1 sheet
- Leek – 1 large
- Butter – 20 g
- Cooked ham – 180 g
- Eggs – 4
- Cream – 200 ml
- Grated cheese – 100 g
- Salt – to taste
- Black pepper – to taste
Method
Preheat the oven to 190°C. Line a tart tin with the pastry and pre-bake it for 10 minutes. Wash and slice the leek. Cook the leek gently in the butter for about 8 minutes until soft. Dice the ham. Whisk the eggs with the cream and season lightly. Spread the leek and ham over the pastry base and sprinkle over the cheese. Pour in the egg mixture. Bake for 30 minutes until the filling is set. Cool slightly before slicing.
