Halibut with seaweed butter

A refined Arctic-style fish plate with flaky halibut, buttery potatoes and a salty umami kick from seaweed.

Serves: 4 people

Preparation time: 8 min

Ingredients

  • Halibut fillets – 4
  • Butter – 80 g
  • Dried seaweed flakes – 2 tbsp
  • Potatoes – 800 g
  • Lemon – 1
  • Salt – to taste
  • Black pepper – to taste

Method

Boil the potatoes in salted water until tender and keep them warm.
Season the halibut lightly with salt and pepper.
Cook the fish in a buttered pan over medium heat, turning carefully, until just cooked through.
In a small pan melt the remaining butter and stir in the seaweed flakes. Warm it gently for 1 minute so the flavor infuses.
Plate the fish with the potatoes and spoon over the seaweed butter. Finish with lemon.
