A simple comforting red lentil soup with onion, carrot, cumin and lemon.
Serves: 4 people
Preparation time: 30 min
Ingredients
- Red lentils – 250 g
- Onion – 1
- Carrot – 2
- Garlic – 2 cloves
- Tomato puree – 1 tbsp
- Vegetable stock – 1.2 l
- Ground cumin – 1 tsp
- Turmeric – 1/2 tsp
- Olive oil – 1 tbsp
- Lemon – 1
- Parsley – 10 g
Method
Cook onion, carrot and garlic in olive oil. Add tomato puree, spices and lentils.
Add stock and simmer until the lentils are very soft. Blend smooth and finish with lemon and parsley.
